It’s been a weird past 6 weeks or so, with going through lockdown and level 3 requirements for covid-19 in New Zealand.
I’m so glad I haven’t had any super strong pregnancy cravings for anything, especially any of the fast foods or takeaways as that would have totally sucked during the lockdown! I’ve finally come out of the worst of my food aversion fog and whilst chicken is still strongly off the menu I am starting to explore some different foods that I would have eaten occasionally before I got pregnant.
I made a list of a few different things that I wanted to try making and one of them was a Teriyaki Salmon Donburi Bowl, partly because I wanted to try my hand at making a Teriyaki sauce and partly because I wanted to see how I got on eating Salmon.
I like to keep my recipes pretty simple and with as few steps as possible, so I knew I wanted to find a Teriyaki sauce recipe I could just throw everything in one bowl and be done with it, I couldn’t be bothered getting out a saucepan.
So here we have it my Teriyaki Salmon Donburi Bowl, which could easily be a chicken, beef, pork or vege donburi bowl as well – you decide!
Teriyaki Sauce Ingredients
1/2c water
1/8c soy sauce (I used reduced salt)
1/3 teaspoon crushed ginger
1 tablespoon honey
1 tablespoon brown sugar
1 teaspoon cornflour + extra water to mix.
Directions
1. Add all ingredients excluding the cornflour to a microwave safe bowl & microwave for 30-60 seconds until the honey has completely melted.
2. Mix the cornflour with a small amount of water until it forms a thin paste with no lumps.
3. Add cornflour mix to other ingredients slowly and stir to combine.
4. Heat again prior to serving.
Teriyaki Salmon Donburi Bowl Ingredients
Salmon (I used two fillets, one would be enough for most people)
Mixed Salad (I used one with lettuce, cabbage & carrot)
Rice (I used 1 cup for two servings – this was a small serving of rice for Kyle)
Aioli
Teriyaki Sauce (Recipe above or store brought if you prefer)
Teriyaki Salmon Donburi Bowl Directions
1. Pop the rice in your rice cooker (or however you usually cook rice)
2. Slice the salmon into thin slices and remove any bones (if any)
3. Cook the salmon over a medium heat.
4. Heat the Teriyaki sauce & stir to ensure combined.
5. Add rice to your bowl, add a couple of teaspoons of teriyaki sauce to the rice.
6. Add some mixed salad & salmon to your bowl with a dollop of aioli
7. Top with a few more teaspoons of teriyaki sauce (to taste)
