Satay Chicken Noodle Salad Recipe

There is something about Satay Chicken, I’m not exactly sure what it is, – (I’m picking it’s just because I love peanut butter), but I am a sucker for satay! I must admit it’s not actually something I’ve made very often, and I’m not really sure why as it’s actually super easy to make and so delicious!

The great thing about this Satay Chicken Noodle Salad is that it is so versatile, once you have your noodles and sauce you can add any vegetables that you like.

I will warn you now, if you enjoy peanut butter you may want to drink the dressing by itself, perhaps with a bit of the chicken for protein. However I strongly encourage you to save some dressing and combine all the flavours of this Satay Chicken Noodle Salad together as they go together fantastically!
Satay Chicken Noodle Salad Recipe


I made use of the different vegetables we had in our fridge, including three different colours of capsicum and a grated beetroot which added beautiful colours to the dish. The beetroot made the noodles go a lovely shade of pink when all the ingredients were mixed together on the plate.

Try out this Satay Chicken Noodle Salad next time you can’t decide what to cook for dinner.

Satay Chicken Noodle Salad – Serves 3-4
Ingredients
400-500 Grams Chicken Breast
1.5 Teaspoons Curry Powder
1 Teaspoon Garlic Powder
1 Tablespoon Coconut Oil
2 Packets of Maggi 2 Minute Noodles with Invisible WholegrainΒ (any flavour)
Vegetables of your choosing, I used the following:
– Kale
– Beetroot
– Capsicum (red, green and orange)
– Carrot
2 Tablespoons Soy Sauce
1 Teaspoon Honey
2 Tablespoons Lime Juice
3/4 cup coconut cream
1/2 Cup Peanut Butter
Shake sea salt

Directions
1. Chop the meat into thin slices, cover with the curry and garlic powder.
2. Chop and grate the vegetables.
3. Add the coconut oil to a frying pan and turn the oven on.
4. Create the sauce; add the peanut butter, coconut cream, soy sauce, lime juice, sea salt and honey to a bowl and combine.
5. Add the Noodles to a saucepan and turn on to cook
6. Cook the chicken breast in the pre-heated frying pan.
7. Drain the noodles from the water once cooked and add to the frying pan.
8. Combine the Noodles, Meat, Vegetables and Peanut Dressing.
8. Serve and enjoy!

  17. I like making beef in Hoisin or oyster sauce and adding an assortment of veges and throw in some peanuts.

  34. It’s definitely one I do with a peanut sauce made from raw peanuts, ginger, garlic and spices added to udon noodles and chicken but I’m going to check out Soba noodles as I’ve been reading about them!

  38. A good ol’ noodle omelette! Omelette with cheese, tomato, spring onion, mushroom, capsicum, bacon, spinach & cooked 2 min noodles. Simple, gourmet & delicious. Good way to sneak some fresh veg into the kids! πŸ˜‰

  39. Usually I would have to say chicken satay, but at the moment we have a lot of wild venison in the freezer. So I buy real ginger and slices it into thin strips and stirfry with vege & fish sauce n soy sauce & beef noodles . I’m a bit funny about reheating chicken, so this is great as leftovers. It’s even better the next day!

  40. when i was a student and noodles were pretty much the basis of my meals – my fav concoction was the noodle egg fu yong
    like an egg pancake with noodles
    its actually still really delicious and a great midweek budget friendy dinner that the kids will devour
    you can add plenty of veges to it also
