One of my absolute favourite ice creams growing up was Tip Top’s Mint Trumpet, Mint Chocolate is the bomb! Since summer is on it’s way I thought I would recreate an old favourite, with a bit of a twist.
I have created a Clean Mint Chocolate Ice Cream Sandwich, with no refined sugars anywhere in sight don’t expect this to be a replica of the trumpet but it is a very good and healthier alternative!
As the weather has begun to heat up and the sun has been rearing it’s head more often it is truly beginning to feel like summer is on it’s way (ironically while I type this, it has just gone from beautifully sunny to rainy – say what?!).
The first of the strawberries have been appearing for a few weeks which is always a sign for me that summer and Christmas is just around the corner. When I think of Christmas I think of summer (it’s summer here in NZ over Christmas, no white Christmas for us!), and I think of long relaxing days in the sun, walking down to the beach for a swim and enjoying a nice cold beverage or ice block.
Mint Chocolate Ice Cream Sandwich
The good news is that this Clean Mint Chocolate Ice Cream Sandwich can be paleo and vegan just by using paleo or vegan friendly chocolate for the shell! Similarly this Clean Mint Chocolate Ice Cream Sandwich is also Gluten-free, just make sure your chocolate is gluten free and you’re good to get munching! I have also provided an alternative to make the ice cream sandwich Nut-free as well! All of these tiny alterations mean that almost anyone can enjoy these!
Don’t be put off by the long list of instructions, this needs to be done in three parts (the ice cream, the sandwich then the coating) however all of the steps are super easy to do!
This recipe is a collaboration with the talented Ari Eats. Our theme was ice blocks or ice creams so we could create something delicious for those summer months which will be upon us soon! Ari created a simple 1 ingredient banana ice cream with plenty of options for yummy add-ins!
- 2 Bananas
- 1/2 Small Avocado
- 200grams quality dark chocolate (I use 85%)
- 3-4 Drops Peppermint Essence
- 1cup Almonds
- 1 cup Pitted Dates
- 1/2 Cup Cashews
- 1 Tablespoon Coconut Oil
- Slice the bananas into coin size pieces and leave in the freezer for a few hours or overnight.
- Blend the Bananas, Avocado and peppermint essence in your food processor (you may need a couple of tablespoons of water to get it moving), it will become ice cream consistency quickly.
- Chop about 25grams (two rows of Green & Blacks 85%) of dark chocolate into small pieces and stir through the ice cream.
- Return the ice cream to the freezer.
- Boil the jug and pour the water over the dates to soak them.
- Rinse out the food processor and blitz the Almonds, Cashews, Dates and Coconut Oil until they combine, you may need a little water to get it moving. (I use a tablespoon or two of the water the dates soaked in).
- Press the mixture into a flat tin keeping it as flat as possible all over (this will become your biscuit).
- Pop the biscuit into the freezer on the tray as well for an hour or so.
- Once frozen pull out the biscuits and cut into small biscuit sizes, this was enough for 8 sandwiches so you will need 16 squares.
- Pop a spoonful of ice cream on one side of the biscuit then press another biscuit onto the top to form a sandwich.
- If you are using ice block sticks then press these into the ice cream now then pop back in the freezer.
- Leave for an hour or so until hardened.
- Melt the remainder of the chocolate either in the microwave or create a bain marie out of two pots. Put water in the bottom pot then the chocolate in the top pot and stir over a low-medium heat until the chocolate has melted.
- Once melted pour into a cup of other dish which is long so you can just dip the sandwiches into the chocolate.
- Place onto a tray with baking paper down and return to the freezer for 10 minutes before eating.

I love “cheat’s” banana ice cream – I always have bananas in the freezer so that I can make some when the craving hits. Maple syrup and walnuts are my favorite additions. This ice cream sandwich sounds fantastic!
