When I made the festive fruit mince and the gluten free fruit mince pies I got thinking about a traditional fruit cake as well and how it would be nice to make a nice and light gluten free fruit cake, so that’s exactly what I did!
This cake is naturally gluten free as the binder is almond flour. You can alter the recipe by changing out the walnuts for another nut of your choice or completely leaving them out all together although I did really enjoy the crunch from the nuts so I’d suggest leaving them in.
I really struggled to take nice photos of this light fruit cake as brown doesn’t tend to photograph that well and the custard I made was white (no yellow food coloring! ;)), however it is a super tasty and very light cake (for a fruit cake!).
This light fruit cake is naturally refined sugar free, dairy free and gluten free.
Ingredients
1/2 of the fruit mince mixture
2 cups almond flour
1 egg
70g walnut pieces
1 tbsp Olive oil
Directions
1. Smash the walnuts into small pieces if not small enough already.
2. Mix all the ingredients in a bowl until well combined.
3. Bake in the oven on 180 degrees Celsius for 30-40 minutes or until when poked with a fork it comes out clean.
4. Cool and store in an airtight container
Notes
This makes a very light fruit cake, not your traditional dense fruit cake. It is best served in a bowl with homemade custard as it is a bit crumbly around the edges.
