I am on the hunt for recipes and healthy food ideas; I need snack ideas as well as lunch ideas which can be easily reheated or made in a lunchtime (for days I go home for lunch) and super easy to prepare/no cook (for days I work out of the office just in case the client doesn’t have a microwave or whatever to cook the food).
I have been a tad dependent on protein bars to fill that gap in between breakfast and lunch and lunch and dinner which no doubt isn’t the best snack to have all the time, albeit better than what I could have been having. My protein bar supplies are running low and now that I have bills to pay (those bars are pretty expensive even when you source them from overseas and are way cheaper than you can buy them in NZ), I am thinking about other snacks I can use that will be both filling as well as nutritious.
I’ve found a few recipes on Pinterest (I haven’t professed my love for this site enough on the blog!) that look yum and relatively healthy as well as easy to make. There are a couple of granola (muesli) bar recipes that use relatively clean ingredients like oats, honey, peanut butter and maybe some seeds or a few pieces of dried fruit to give them a bit of a sweet taste. Once we move into our new place I’ll give one or two of these a try and see how they turn out and post the recipe if they are successful.
So far my go-to lunch has been packet soup (hello sodium) with rice crackers as it’s super easy and doesn’t need any equipment other than a kettle to make, I’m not exactly covering all the macro-nutrients in that lunch as there’s no protein so I need to find something I can have that has a bit of protein in it yet doesn’t have to be refrigerated for the morning (There is a fridge at work but can’t be counted on out of the office), I was thinking yoghurt or making my own sushi which would both be fine if taken out of the fridge at home in the morning, although yoghurt isn’t that nice at room temperature. Perhaps it’s time to invest in a cooly lunchbox, or one that keeps food hot for that matter. If you have any suggestions let me know!
At the moment I’m loving curries and crockpot meals for dinner, so easy to make and good for you too. The crockpot meals are literally cut up meat, cut up vegetables, throw in some kind of sauce/crushed tomatoes and your away laughing. Store bought curry pastes make curries so easy, add a little curry paste a bit of coconut milk some protein and vegetables and you’re done.
Do you have any meal or snack ideas that are filling yet healthy?
Not for everybody, but my taste buds like water-packed sardines, sprouted wheat bread, and tomatoes for lunch. Another quick one is sprouted wheat bread, raw almond butter, and banana slices. I also like apple wedges with a raw nut butter for a snack. A mix of almonds, hazelnuts, and macadamia nuts is also tasty snack material. Grapes are easy too.
