I love me some biscuits, so much so that we can’t purchase them or the thought of them will consume my mind until I have eaten them all.
I had been wanting to try to make some Healthy Granola Cookies for a while and when I stumbled upon the Healthy Granola Cookie recipe from Petite Kitchen I knew I had to give it a go.ย I have slightly adapted the recipe from Eleanor’s original Healthy Granola Cookie recipe, the adaptation remains gluten free, refined sugar free, paleo friendly and egg free.
I have made a few batches of these Healthy Granola Cookies now and they are pretty darn good, I think we have perfected them for us now.ย They are the perfect cookie to take camping, walking or mountain bike riding and they are a great source of healthy fats.
- 1 Cup Almond Flour
- 2 Heaped Tablespoons Peanut Butter
- 1/4 Cup Pumpkin Seeds
- 1/4 Cup Sunflower Seeds
- 1 Cup Dates
- 1/2 Teaspoon Baking Soda
- 8 Squares Quality Dark Chocolate (I used Whittakers Dark Ghana 72%)
- 1 Tablespoon Hard Coconut Oil (or 2 Tablespoons if it is liquid)
- Boil the jug and pour boiling water over the dates, leave to the side.
- Preheat the oven to 160 Celsius.
- Roughly Chop the chocolate into smaller chunks.
- Pop all of the remaining ingredients (excluding the chocolate) into your food processor. Once you have added them all you should be able to drain the dates and put them in the food processor as well.
- Process until combined (you may need to stop the processor a couple of times and push the ingredients around a little as the Peanut Butter sometimes clumps in the beginning).
- Add the chocolate to the food processor and pulse a couple of times (don’t do it too much or you won’t have any decent chunks of chocolate).
- Roll into balls on an oven tray.
- Flatten with a fork (if you dunk the fork in water in between each cookie it will stop the cookie from sticking to the fork).
- Bake for approx 12 minutes.
- Pull out of the oven and leave to cool before moving or they will try to fall apart.
- Devour!

I’m normally not on board with granola because it’s kind of like bird feed but if it comes in bar form then I’m more likely to indulge ๐
It’s not too granolaey (not a word!), which makes them nice. Blitzing the nuts and seeds up makes them more like a flour ๐
