Healthier Deconstructed ANZAC Slice [Gluten Free] + WIN

ANZAC Day is a special day for us Kiwis. ANZAC (Australia, New Zealand Army Corp) day is national day of remembrance in Australia and New Zealand that commemorates all Australians and New Zealanders who served and died in all wars, conflicts, and peacekeeping operations. Whilst a lot of people are just stoked that they get a day off work now that ANZAC day has been ‘mondayised’, it is a great day to spend time with your family and reflect on the things you are grateful for.

This 25th April (ANZAC day) is the perfect opportunity to get in the kitchen and try your hand at baking something ANZAC related. While the usual ANZAC biscuits are lovely I thought I would try my hand at something a little bit healthier and different this year.

For those non-kiwis you may be wondering why they named a biscuit after the Anzacs? Well, here’s how it goes; Care packages sent from those back home to the soldiers, needed to contain ingredients that didn’t spoil and therefore the soldiers would receive them in edible condition. The traditional ANZAC biscuits contains flour, oats, golden syrup, dessicated coconut, sugar, butter and bicarbonate of soda.

I’ve decided to do something a little bit different this ANZAC day so I created a deconstructed ANZAC Slice. This healthier deconstructed ANZAC Slice is naturally gluten free as well as dairy free (if dairy free chocolate is used). It’s actually super easy to make and doesn’t take long at all but it looks really pretty served in a glass!


This deconstructed ANZAC slice is definitely healthier than most ANZAC slices or biscuits you will come across, but it is still a sometimes food as it is very rich. I have opted to use Chelsea Golden Syrup #chelseasugar as this is what was used in the original ANZAC biscuits during the war and it just wouldn’t feel right leaving it out. The Golden Syrup lends a lovely caramel flavour to the recipe and this deconstructed ANZAC slice just wouldn’t have that ANZAC feel to it without it.

Healthier Deconstructed ANZAC Slice Move Love Eat

Ingredients

Base:
3/4 Cup Almond Flour
3/4 Cup dessicated coconut
2 tablespoons Chelsea Golden Syrup
1 Tablespoon coconut oil
1 Teaspoon Vanilla Extract

Caramel Filling:
1 Cup Dried Dates
1 Teaspoon Vanilla Extract
1 Tablespoon Peanut Butter
1 Tablespoon Coconut Oil
1 Tablespoon Chelsea Golden Syrup

Chocolate:
12 Squares Dark Chocolate (approx 1/3 large block)

Directions
1. Add all the ingredients for the base to a bowl and combine.
2. Crumble the base into 4 short tumblers that you will be serving the deconstructed ANZAC slice in.
3. Melt 4 squares of the chocolate in the microwave (approx 30s – 1 minute should do)
4. Take a teaspoon of chocolate, drop it onto baking paper and then use the back of the teaspoon to spread it flat.
5. Pop the chocolate on baking paper in the freezer.
6. Add all ingredients for the caramel filling into a food processor (or hand mix, it will just take a little longer to combine) and combine.
7. Spread the caramel mix evenly over the 4 short tumblers.
8. Melt the remaining chocolate in the microwave and evenly distribute over the 4 short tumblers.
9. Remove the chocolate from the freezer and break into smaller shards, stand up in the 4 short tumblers.
10. Store in the fridge, until time to eat.

  1. Drool, I am totally trying this! I will be away for ANZAC weekend so I cannot get to a dawn service, but my husband will be taking my boys down to the local service.

  2. OMG so yummy!! Am definitely going to make this. I usually get up early for my workout sessions, so will probably get up for the dawn service this ANZAC Day.

  15. We are hearing to a service before I’m starting work at 10am working n tourism , so this means we don’t have to start trading until 1pm , it’s going to be hectic weekend with engagement party too and lots of family in town but love the services and always take Nana 🙂

  16. A great twist on the original! My son will be exactly 9 months old on the 25th, we won’t be going to a dawn service this year as he is a little young. But I will take him when he is older and teach to him about the significance of the day.
    We will have a family day at home for rememberence and be grateful for what we have. As well as make some Anzac biscuits, deconstructed or regular!

Ooooh yum that looks amazing and something different from the traditional cookies (will still make those as well as great with a cuppa) We are going to pass on this year as our little lady is still a tad young but hoping to go next year where she will start to understand the importance of it.   28. We might attend a dawn ceremony and then go fishing depending on the weather. But we never forget and go to our local rest home to gift some anzac bikkies and a visit. My grandfathers were a pilot and the other a foot soldier. They were brave and amazing people and the memory of wheat they have done for us has been talked to to our children and now grandchildren

    Yes hope to attend the Wanganui dawn ANZAC Day serrvice. It is a yearly tradition and one that’s been done since I was a wee girl – a few moons ago.
