Gluten Free Garlic Herb Crackers

There is something rather satisfying about biting into something crunchy like these gluten free garlic herb crackers! I’ve always had a sweet tooth but I can still appreciate something crunchy and savoury.

I’d been wanting to try my hand at making some homemade crackers for a long time now but didn’t really know where to start and we’ve been so busy that it’s been hard to find the time to really get creative in the kitchen.

Over the weekend I made a batch of my homemade healthier lemon curd, crepes using banana flour and these gluten free garlic herb crackers!

These gluten free garlic herb crackers are so easy to make, I was pleasantly surprised when they also tasted freaken delicious! It doesn’t have to be hard to make good, healthy foods! You literally chuck everything into your food processor and your away laughing.

With more protein and healthy fats and less carbohydrate than your traditional crackers, these gluten free garlic herb crackers are a win in the nutritional department and you don’t need many as a great snack. They are perfect on their own (the flavour really shines through!), or paired with your favorite hummus.

Ingredients
1.5 cups oats
1 cup almond flour
1 tablespoon LSA
2 Egg Whites
1 Cup grated cheese (not packed in, prob would be 30-40g)
2 teaspoons garlic powder
1 teaspoon paprika
1/2 teaspoon ground chilli seasoning
2 teaspoons mixed herbs
Shake Sea Salt

Directions
Preheat oven to 180.
Put the oats in the food processor and process until a flour forms (a few chunks is fine)
Combine everything else (including oats) in food processor until a ball starts to form.
Roll out between two sheets of baking paper (you may need to do this in two batches), they should be quite thin.
Run a knife over the flattened dough to form cuts (they don’t have to go all the way through) so you can easily snap them into crackers once cooked.
Add a shake of sea salt over the top of the crackers before baking for added flavour (omit if you don’t need extra salt).
Pop in the oven for 10 minutes then turn the oven off and leave in the oven for a further 10 minutes.
Crack into crackers along the cuts you made and store in a container.

Notes
I cut mine into small squares and it made 50 squares.
5 squares is 143calories, 15g carbs, 7g fat, 6g protein for those who are interested.
You can substitute any herbs/spices you like and don’t need to use LSA we just had some so threw it in there.

  1. I love garlic recipes, and whether you choose hard neck or soft neck types of garlic , you have a plant that has a rich history, both as a medicinal plant and as a culinary one. In olden times, strings of garlic (presumably Silverskins) were worn around one’s neck to ward of spirits. If the cloves were ever crushed, it’s fair to say that people probably kept their distance as well. Garlic is also thought to be somewhat effective in preventing high blood pressure, heart disease, and cancer. While such claims are seemingly far fetched, they do seem to have some validity, if for no other reason than garlic is exceeding rich in vitamin C. vitamin B6, fiber, and carbohydrates, and is a very good source for a number of essential minerals – zinc, calcium, and magnesium to name three. As far as culinary uses are concerned, the list is practically endless.
