These are a quick and easy clean snack that tastes like a treat. They also happen to be clean and gluten free, bonus!
I love making these as they are so versatile and the basic recipe only requires two ingredients….
Yep that’s it, just one cup of dates and one cup of almonds (or other nuts of your choice!). If your not a huge fan of dates still give them a go as I don’t really like them either but they taste completely different done like this.
All you need to do is get a cup of dates (I used pitted ones found in the baking aisle of the supermarket) and soak them in hot water for 5-10 minutes. This helps to soften the dates when putting them in the food processor.
Next pop the dates in the food processor and process until it becomes a paste, add in the nuts of your choice and process again until all mixed up. You can roll these into balls (or a slice) and eat as is, or roll in coconut.
Once made, keep in the fridge and eat over the next couple of days, they also freeze well and don’t take long to defrost. If you want to make a large batch and keep them in the freezer and pull them out whenever you feel like a sweet treat.
You can keep them nice and basic or add in any extra’s you like, I like adding in some protein powder and seeds for a little extra crunch. You could add cocoa to make them clean chocolate truffles or any other dried fruit added in would be quite nice – that’s the beauty of this recipe, the options are endless.
I have also used ground almonds in place of the whole almonds then just added a small handful of the whole almonds and pulsed in the food processor a little before rolling – just to add some crunch into the truffles.
I created some protein truffles for our trip to Waiheke Island and added a lot of random (but healthy) ingredients as I thought they would make a nice energy dense snack while cycling for a few hours!
Directions
1. Soak the dates in hot water for 5 minutes and cut into smaller pieces (hold on to the date water)
2. Throw all the above ingredients (in the photo) in the food processor (including the dates)
3. Process

If it is a little dry and not mixing add a tablespoon or two of the date water, one at a time and give the food processor a couple attempts at trying to mix it up as the mixture gets too wet to mould very quickly. I had to add about 8 tablespoons in the end as I had a lot of dry protein powder in this recipe.
5. Roll into small balls and roll in the coconut.
6. Eat
7. If there are any leftovers put them in the fridge (if not going to be consumed in a few days, put in the freezer).
They are such tasty little morsels!
