As I mentioned in my last post it is NZ Honey Week this week and I am very excited to be putting together these recipes and helping to raise awareness and support of New Zealand’s sweetest natural resource by encouraging more people to include it in their diets. (The goal of NZ Honey Week!)
I’m not quite sure how it happened but last night I had a brain wave after I had been thinking about what I could make for NZ Honey Week. This was after I had made the Honey Nut Clusters and not too long before it was time to watch the inside of my eyelids for a few hours.
Marshmallow!
Within about 10 minutes and with only a few ingredients – Honey being the star I had some really easy home made marshmallow sitting in the fridge to set overnight.
The Marshmallow is pretty clean, gluten free, free from added sugars and can be made vegan by substituting the gelatin for agar powder.
Ingredients
1/2 cup water
1.5 tablespooons gelatin
3 Tablespoons Honey
Vanilla Essence – 1 cap
Coconut or chopped nuts for dusting on the outside
Directions
1. Place gelatin and half the water in a microwave safe bowl – microwave for approx 1 minute until the gelatin has dissolved.
2. Place the honey, remainder of the water and vanilla essence in a saucepan or in the microwave until it is runny (or use runny honey!).
3. Put the honey mix and gelatin into a large mixing bowl and mix until it is completely frothy and a little bit stiff – this may take up to 10 minutes depending on the speed of your mixer.
4. Line a tin with baking paper or grease so you can get the Marshmallow out! – I used a loaf tin but any type will do.
5. Pour into the tin and dust the top with coconut or nuts if you fancy, or leave it plain. (If you want the coconut or nuts to be on both sides of the Marshmallow you will need to put some in the bottom of the tin before pouring in the Marshmallow.
6. Leave in the fridge for a couple hours to set.
You could even get enthusiastic and add a little food colouring and make different coloured marshmallows if you like. Have fun with it, red, green and white for Christmas anyone?
Also – secret time – I can’t stand store brought Marshmallow, I have never been a fan but I do like this home made marshmallow! And this recipe leaves you with a sweet taste of honey with all the airy goodness that is Marshmallow.
