Coconut Chocolate Recipe

The first thing I wanted to try once I received these amazing products from The Coconut Oil Shop to trial was to make some home made chocolates. It has been a VERY long time since I had chocolate and to be honest I’m more of a lolly person (It’s been even longer since I’ve had them actually!)

The good thing with this recipe is that you can make the chocolate as dark or as sweet as you like – using just natural sweeteners. This recipe is also gluten free, refined sugar free, vegan and vegetarian.

Home Made Chocolate

Ingredients
100g Coconut Butter
3 Teaspoons Cacao Powder (I used ground cacao nibs and it gave it a grainy texture so definitely use powder) or Cocoa Powder
2 Teaspoons Agave Nectar (or honey or maple syrup)
1 Shake of Sea Salt (helps bring out the flavour)

Directions
1. Melt the Coconut Butter by placing it in a bowl and then placing the bowl inside another bowl that has boiling water in it. Or you can melt in a saucepan but make sure it’s over a low temperature and keep an eye on it so it doesn’t burn.
2. Add the remainder of the ingredients and mix until combined.
3. Taste test – is it tart or sweet enough for your liking?
4. Add more cacao powder or agave nectar until it’s at your liking.
5. Pour into chocolate moulds (I used mini muffin tins and filled them up about 1/3 of the way) or spread onto a cookie tray lined with baking paper.
6. Pop in the freezer for half an hour or so to harden.
7. Eat
8. Keep the chocolates in the fridge although I doubt they will last too long.

Note: These chocolates do have a slightly different texture to your standard block of chocolate that has a tonne of ingredients that you can’t pronounce.  Give it a try though I think you’ll like it 🙂
