Chocolate Quinoa Bites [3 Ingredients!]

After making my Chocolate Peanut Butter Quinoa Slice I still had quite a lot of puffed quinoa left over so I decided to try my hand at making three ingredient chocolate quinoa bites.

I wanted something that was portable, easy to eat and tasty. I already know that peanut butter goes well with dark chocolate and I wanted to use up some puffed quinoa so these three ingredients have formed my Chocolate Quinoa Bites!

Three Ingredient Chocolate Quinoa Bites

I always feel like a bit of a con when I pop up recipes like this on the blog as they aren’t exactly hard to make, with only three ingredients. However they are darn tasty, and not too sweet which is nice.

Use a good quality dark chocolate and go as dark as you can handle. We usually have 85% or 90% however they don’t sell it at our local supermarket so we went with our next best option which is the 72% dark ghana.

Ingredients
  • 1/2 cup crunchy peanut butter
  • 1 cup puffed quinoa
  • 125grams dark chocolate (I used Whittakers 72% dark ghana)
Instructions
  1. Melt the peanut butter slightly in the microwave.
  2. Pop the puffed quinoa and peanut butter into your food processor and pulse gently until combined.
  3. Roll into balls and pop into the freezer for 10 minutes to harden.
  4. Melt the chocolate and dip the balls into the chocolate then back on to the tray and back in to the freezer for another 10 minutes to harden.
  5. Eat
Notes
If you want to use less chocolate just drizzle it over the balls rather than rolling the whole ball in it. To make nut free, use sunflower seed butter. You can use smooth peanut butter, I just like the chunky texture of crunchy.

  2. They look delicious, and easy to make. I would probably use another nut butter but I’m sure they would turn out just as tasty.

  3. Haha! I love the bit about what you said about feeling like a con, bc I can totally relate. 3 ingredient recipes still require work though! I think this recipe will work perfectly with some leftover quinoa that I have. Will this also work with a milk chocolate?

  4. This looks amazing, I too love really dark chocolate but have never gone above 85%. The darker chocolates also tend to be less sweet , something I like. I will give this a try!

  5. Looks absolutely delicious! I love quinoa, but I don’t think it’s possible to get puffed quinoa where I live – I guess I’d need to prepare it myself.
