This was originally going to be a dairy free egg nog recipe, however the late addition of Baileys kind of screwed that plan up! My Baileys Egg Nog Recipe is still very low in dairy as the only dairy in the mix comes from the Baileys.
I’m not a big drinker at all however I do enjoy a small glass of Baileys every now and again, either on the rocks or with some milk. I will add the proviso to this recipe that I’ve never actually had traditional egg nog before so I have no idea if this baileys egg nog tastes anything like the real thing however it is something different and it certainly tastes pretty festive to me!
Ingredients
1 Tin coconut Milk
1 Tin Unsweetened Almond Milk (Fill the coconut tin up with almond milk)
1/4 Teaspoon Vanilla Paste
1/2 Teaspoon Cinnamon
1/4 Teaspoon Nutmeg
1/4 Teaspoon Allspice
2 Tablespoons Honey
4 Large Eggs
Baileys to taste
Directions
1.Place coconut milk, almond milk, vanilla paste, honey and spices into a large saucepan over a low heat
2. Place the eggs into a large bowl and whisk up until mixed together well.
3. Once the milk mixture is nice and hot but not quite boiling slowly ladle one spoon at a time into the egg mixture and continuously stir around slowly (take your time with this as you do not want the egg to scramble!) until all of the milk mixture is combined with the egg mixture.
4. Return all of the mixture to the stove on the lowest heat you can have and continuously stir until the mixture begins to thicken a little.
5. Chill the mixture in the fridge until all cold.
6. Add a shot of baileys to your glass, fill with the egg nog and stir.
7. Enjoy!
Notes
You can make this with raw egg and skip the steps about tempering the egg, instead simply add all ingredients (excluding baileys) to a blender or food processor, process and then chill in the fridge. Add your shot of baileys to each glass when your ready to serve and your good to go!
