Feijoa Coconut and Honey Cake Recipe

Last week I wrote about Investing in your Identities.

Two of the identities that I resonated with but hadn’t been doing a lot with lately are blogging and recipe creation.I haven’t been blogging as much for a number of reasons, one being that I really like to play around with and create new recipes and post them on the blog. The fact that I am forever watching my weight to keep in my weight class means that this has gotten put on the backburner.

After listing to the Gretchin Rubin podcast on Investing in your identities and after having taken home a big bag of free feijoas I realised that I can still create things, I don’t HAVE to eat everything I create.So I set about making a healthier version of a feijoa cake. This Feijoa, Coconut and Honey Cake is gluten free, refined sugar free and dairy free but it’s still pretty tasty. If you’re not a feijoa fan then don’t stress as the cake isn’t actually very strong like feijoa’s at all.

Feijoa Coconut and Honey Cake Recipe, Gluten Free, Refined Sugar Free

I knew that I would use ground almonds as a base and either honey or dates as a sweetener and that’s about all I knew when I decided to whip up this Feijoa coconut and honey cake.I ended up tasting the edge pieces that stuck a little bit to the baking paper and then taking the rest of the cake into Kyle’s work for them to eat. I must say I was a little sad when he brought home an empty plate, I thought there would still be some left!

Ingredients

1.5cups feijoa (insides scooped out)
2 cups ground almonds
3 eggs
3 tablespoons honey (+ 1 Tablespoon for the top)
3/4 cup desiccated coconut (+1-2 Tablespoons for the top)
1 teaspoon vanilla essence/extract
1 teaspoon baking soda
1/2 teaspoon cinnamon

Directions

Mix all of the above in the food processor (leave out the 1T Honey and 1-2T Coconut for the top of the cooked cake).
Preheat the oven 150C
Cook for 45-50 mins, check thing comes out clean.’,

I love recipes where you throw everything into the food processor and then into a pan and bake and it comes out as something edible! Give this feijoa coconut and honey cake a go, it was pretty easy and there are heaps of feijoa’s around at this time of year!’
