There is something a bit decadent about Pecan Pie. Between the pecans and the caramel flavoured filling you just can’t go wrong.
The only downsides to the standard Pecan Pie is that they are full of sugar and often use the oven – which let’s be honest, we don’t want to be doing at this time of the year!
I really wanted to recreate a healthier version of a Pecan Pie Bar, and so with the help of Tasti, these No Bake Pecan Pie Bars were born!
These No Bake Pecan Pie Bars are sweetened with honey and dates and are refined sugar free and naturally gluten free. Whilst they still contain sugars and should be consumed in moderation, these No Bake Pecan Pie Bars are substantially better for your health than the traditional options.
Ingredients
Crust
300 grams Tasti Natural Cashews
2 Tablespoons Honey
2 Tablespoons hard Coconut Oil (if yours is melted use 4 Tablespoons)
1/2 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
Filling & Topping
2 Cups Pitted Dates
1/2 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
2 Tablespoons Coconut Oil
1.5 Cups (2 small packs) Tasti Pecans
Directions
1. Boil the jug and then cover the dates with boiling water in a bowl.
2. Blend all the cashews into a powder in your food processor (small chunks are fine)
3. Add the remaining crust ingredients to the food processor and combine.
4. Push the crust mixture into a tin lined with baking paper.
5. Add 1/2 the Pecans (1 bag) to the Food Processor and pulse slightly until broken into small chunks – put the Pecan chunks aside.
6. Add the soften dates and 2 tablespoons of the date liquid to the Food Processor along with the cinnamon, nutmeg, and coconut oil, combine until a paste forms.
7. Return the Pecan chunks to the Food Processor and combine with the date paste mixture (this will not take long as you don’t want to break down the Pecans too much).
8. Scoop the filling mixture on top of the base and spread out until even.
9. Add the remaining bag of Tasti Pecans to the top of the filling and spread evenly, push slightly into the filling so they will stick on top.
10 Pop in freezer for 3-4 hours until set.
11. Cut into Bars and store in the Fridge in an airtight container.
