Last week I brought you my refined sugar free festive fruit mince recipe in anticipation of making these fruit mince pies which I am going to give you the recipe for today! My fruit mince pies are gluten free, refined sugar free and paleo (provided you allow a bit of honey in your diet, some Paleo folk do, some don’t).
You will need to have either made my festive fruit mince recipe from last week or to have purchased some store brought fruit mince for this recipe. I’d definitely advocate for making your own, it’s super simple to make and is pretty cost effective as well as you will know that there are no added sugars like the store brought fruit mince.
My gluten free fruit mince pies are pretty tasty if I do say so myself! You do get a slight hint of almonds from the crust but it’s not overpowering. If you decide to do a full crust on the top of the pies instead of the criss cross pattern I have gone with you will obviously get more of the almond taste simply because there is more crust.
Ingredients
Crust
3.5c Almond Meal
2 Eggs
1/2 Teaspoon Vanilla Paste
1 Tablespoon Olive Oil
3 Tablespoons Honey
1/4 Tablespoon Cinnamon
Fruit Mince
1/2 of Festive Fruit Mince Mixture
Directions
1. Combine all of the crust ingredients until it forms a dough.
2. If a bit wet add a little more almond meal, if a bit dry add a tiny amount of water.
3. Grease Muffin Tins
4. Break off a small amount of dough and squash it flat in your hands and press into the muffin tin (I like mine nice and thin, how thick you go is up to you)
5. Add a tablespoon of the festive fruit mince mixture into your muffin tin
6. Create small strips to go across the top of the fruit mince pies with your crust mixture.
7. Repeat until all the mixture is gone.
8. Bake in the oven at 160 degrees Celsius for 30 minutes

Store in the fridge
Best eaten the same day or next day as they soften a little over time but are still edible!
Makes about 18 pies – depending on how thick you make the crust
