Homemade ‘Popcorn Chicken’ Recipe

We have chicken a lot for dinner, and by a lot I mean probably four to five days a week at least. One evening I threw a bunch of bits and pieces into a bowl and coated the chicken and it was pretty tasty I had to try and recreate it. So my Homemade Popcorn Chicken was born!

This has to be one of the easiest recipes I have done to date, it is literally throw the ingredients into a bowl (or bag), mix it around and coat the chicken, cook and you have some yummy homemade popcorn chicken.

Homemade Popcorn Chicken

This homemade popcorn chicken is paleo and I love that it only has a few ingredients, all of which are easy to come buy and you can purchase in the supermarket! The LSA mix adds a little bit of crunch to the mixture while the paprika gives it a bit of a smokey taste.

We cooked our homemade popcorn chicken in our George Foreman Press which is great for cooking as the fat drips off the press, but it cooks the meat perfectly!

Ingredients
  • 500g Chicken Breast (or tenderloin or thighs)
  • 2 Heaped Tablespoons LSA (Linseed, Sunflower & Almond Mix)
  • 2 Heaped Tablespoons Almond Flour (Almond Meal)
  • 1 Teaspoon Cumin
  • 1 Teaspoon Paprika
Instructions
  1. Chop your chicken into bite size pieces
  2. Pop all the other ingredients into a bowl and mix together
  3. Pop the chicken in the bowl and coat with the coating
  4. Cook on your George Foreman Grill (if you don’t have one you can use a frying pan or bake in the oven).
  5. Eat!
Notes
You can find LSA in most supermarkets these days. You can make your own almond meal by popping almonds in a food processor (or coffee grinder) and processing until it resembles flour.
