Easy Ginger Slice {GF, SF, DF}

I thought I would try making a Clean Ginger Slice and see how it compares (from memory!) to the ginger slice that I had so often growing up. When I was growing up baking was a big part of our lives. Mum would often be in the kitchen making goodies for our school lunches and snacks. One of the goodies I remember her making often was a ginger slice which I really loved. No doubt it was full of sugar and flour and other such ingredients.

While I really enjoy a ginger slice, I’m actually not a huge fan of ginger overall. We use crushed ginger in a lot of our savoury dishes but I never use a lot of it as I can find it quite overpowering at times.

Ginger is a great spice to incorporate into your diet as it boasts many benefits including being an anti-inflammatory and  helping to relieve nausea, I even read that ginger has some minor aphrodisiac benefits but who really knows.

Easy Ginger Slice {GF, SF, DF}

This clean ginger slice is refined white sugar free, grain free, gluten free and dairy free and can also be made paleo (and completely refined sugar free) with a simple switch from agave nectar to raw honey. If you are after a nut free ginger slice I have given an alternative to the cashews in the recipe, you could also do half sunflower seeds and half coconut chips if you do not have issues with coconut.

You will need a food processor for this recipe, I use my trustee Russell Hobbs Multi-Food Processor to make the base, the icing is made in a saucepan over a low heat.

Ingredients

Base

  • 1 Cup Cashews (or sunflower seeds if you want a nut free version)
  • 1/2 Cup Pitted Dates
  • Boiling Water to cover the dates
  • 2 teaspoons Ground Ginger

Icing

  • 4 Tablespoons Liquid Coconut Oil
  • 3 Teaspoons Agave Nectar (can substitute for honey or maple syrup to make paleo)
  • 3 Teaspoons Ground Ginger
Instructions
  1. Boil the jug, once boiled pour enough boiling water over the dates to soak.
  2. Line your baking tray with baking paper.
  3. Pulse the cashews until they resemble a flour (a few small chunks is fine).
  4. Add the dates to the food processor and process.
  5. Add some of the water the dates soaked in (one teaspoon at a time) until the mixture starts to come together. You don’t want it too wet, just enough to combine all together.
  6. Press the mixture into your baking tray and pop in the freezer.
  7. Add all the icing ingredients to a small sauce pan over a low heat.
  8. Stir the ingredients until everything has melted together then take off the heat.
  9. Immediately whisk or beat the icing ingredients until it becomes smooth and begins to thicken and resemble a caramel.
  10. Taste test the icing and make sure there is enough ginger for you, if not add a little more.
  11. Take the base out of the freezer and pour the icing over the top.
  12. Return the clean ginger slice to the freezer and leave in the freezer for a few hours until completely set.e

  1. I am new to the site & would love to try this recipe. I drink a lot of ginger tea, but have never heard of ginger slice either! I have to take the risk of sounding dumb, but what is the ‘base’ in the recipe?

  2. Made this yesterday and its deliiish! Only trouble I had was getting the icing to not seperate, the coconut oil didn’t wanna mix 🙁 still yummy nonetheless!
