One weekend we decided to take a stroll down through Parnell with a destination in mind, Sal’s Pizza: my partner had been lucky enough to try some Sal’s Pizza at an end of month team meeting and had been raving about them since.
We had completed a big gym session earlier that morning and the bf decided he was in need of a ‘carb up’ day and pizza was his ‘cheat’ meal of choice. We arrived at Sal’s in Parnell on the verge of being hangry yet we knew our taste buds were going to be delighted soon enough.
I decided to order just one slice of pizza and a few buffalo wings as I wasn’t really in the mood for a lot of pizza and figured more protein couldn’t hurt. I’d never tried buffalo wings before so didn’t really know what I was getting myself in for so just got the original ones rather than the hot ones.
Lucky I only got the original ones as they were super hot, I couldn’t imagine getting the hot ones! My lips were tingling most of the walk home and my nose was trying to run away from me. But they were damn good!
Since I’m such a generous person I let my bf try a couple of the wings, bad move as this means he got a taste for them 😉 He was raving about them so much I knew I would have to try and make some at home otherwise we would be down at Sal’s all the time!
After a bit of searching to see what kind of ingredients usually went into buffalo wings as well as having a think about what we had in our pantry we made sure we had all the ingredients required and the next time chicken nibbles were on special we grabbed a couple of packs so I could get to work creating some clean buffalo wings.
Since these clean buffalo wings are baked and not fried and use all whole ingredients you can rest assured knowing that you are getting your protein needs without all the additives you would usually find in such a meal.
Generally Buffalo wings are served with ranch dressing and celery however I am not a fan of celery so decided to serve ours with some garlic aioli and carrot sticks. Having a creamy dipping sauce is great as it helps to cool down the mouth a little!
- 1.5kg chicken nibbles
- 6 Tablespoons hot sauce (you can find this in the sauce isle of your supermarket)
- 3 Tablespoons coconut oil
- 1 Teaspoon garlic powder
- 1 Tablespoon lemon juice
- 1 Teaspoon paprika
- 1.5 Tablespoons apple cider vinegar
- Shake of sea salt and pepper
- Steam the chicken nibbles by themselves for 20 minutes.
- Refrigerate the chicken for 1 hour, which will help to crisp up the chicken when being baked.
- Place on a raised baking rack and bake for 20 min each side at 180 celcius.
- While the chicken is baking mix together the remainder of the ingredients (you may need to heat the coconut oil slightly to make it turn into a liquid). Have a little taste test of the sauce to see if it is hot enough for your liking.
- Check the chicken – If the chicken is not crisp enough for you up the heat a little but be careful they do not burn.
- Check the chicken is cooked by poking a couple of the nibbles, the juices should run clear. Pull the nibbles out of oven and place into a large serving bowl.
- Stir through the sauce and serve with carrot or celery sticks and paleo aioli or ranch dressing (or non paleo if it meets your requirements).
These sound great – we’re managing allergies and this recipe will do fine for all of us (I’ll probably just put less hot sauce in for the munchkins taste buds). MMM.
Definitely adjust to your tastes and maybe see if you can get a mild hot sauce? The one I picked up was extra hot as there wasn’t anything else at our supermarket.
