I saw a pin on pinterest when I very first joined that was for an avocado pasta and it looked amazing. I have thought about it a few times since and finally got around to making my own version of it a few weeks back.
It is super easy and you can add or remove ingredients as you fancy, the basic ingredients are the pasta and the avocado, the rest is up to your interpretation!
I used the following:
– Lime Juice
– 1 Avocado
– 3 Frozen Spinach Cubes
– Crushed Garlic
– Chicken Breast
– Spaghetti Pasta
– I also added a few crushed cashews on the top for a bit of crunch.
All you do is cut the chicken up and put a bit of garlic on it (and mixed herbs and ginger if you fancy – I did) then pop it on to cook while cooking the pasta. While the pasta and chicken cook mash together the avocado, some lime juice and a bit more garlic if your that way inclined.
When the chicken and the pasta had almost finished cooking I defrosted the cubed spinach.
To put it all together drain most of the pasta water, retain a few tablespoons. Mix through the avocado mixture and the spinach then add the chicken and mix again.
When you plate it up add some crushed nuts on the top and take the lime juice to the table with you so you can add more if your taste buds lend to the tart side.
So easy and quick and it can be made to suit any number of food preferences!
Use gluten free pasta to make gluten free, zoodles (zuchinni noodles) to make paleo, omit the chicken and use vegetarian friendly noodles to be vegetarian etc.
