Note: This post was from back when I was starting to get into the health/wellness/fitness lifestyle, I hardly ever have fettuccine these days (once a year maybe) and make no claims that this is ‘healthy’, although it has been healthified from the versions with cream 😉
So I have an obsession with Fettuccine, even though its not good for me, mum and I often share one when we go out for lunch and have tried pretty much everywhere in town.
For this reason I hardly ever make it at home but yesterday I had a craving for chicken and ham fettucine so I had to whip one up!
I’m pretty sure I missed out an ingredient or two from when I used to make it a lot but it was still really yum!
Its not quiet as unhealthy as it looks though, we used to have a giant bowl full by itself so I cut the serving size and added a salad.
The actual fettucine is made with;
– Lite evapourated milk
– Packet of creamy chicken soup
– Packet of mushroom soup
– Water
– Chicken
– Ham
– Fettucine (& some spaghetti noodles as we didn’t have enough fettucine and I didn’t want to go to the supermarket).
Cook the chicken, add the evap milk and soups with a bit of water while boiling the pasta in a seperate pot, chuck the pasta in with everything else and chuck some ham in it and cook for a couple of minutes then serve with a bit of parmesan cheese – see yumness!
As a side note that was the first time I used the cute little boat type bowls, I got them at pak n save for $3 each on the weekend, love love love them and they are quiet small so when you fill them up it looks like your getting lots to eat! I brought them to make mini potato bakes and cauliflower with cheesesauce in or small apple crumbles, a good size for those kind of things for two people compared to the huge dish I was using that could proberly serve 8 yet we always managed to eat at least half each dinner time.

I love the idea of tricking yourself into smaller portions using smaller vessels…think when I end up buying more homewares (seeing as I am currently selling all mine) I will go for lot’s of small dishes!
I think it really helped, I ate less last night than I normally would have and I was full all night! Definately a good idea, combined with putting away leftovers as soon as you dish up usually helps to eat less!
Might have to try that recipe! looks really good! Might share my low fat recipe with ya too if ya lucky 😉
