So here’s a recipe for ya that DOESN’T include two cups of sugar!
Well actually I can’t really give a proper recipe as I didn’t measure anything, I started off with some basic ideas from Pinterest and then realised I forgot to get banana’s so just rolled with it. I knew dates helped things stick together and also added a bit of honey to help bind it all.

The ingredients were:
Dates
Quick Oats
Rolled Oats
Honey
Saltana’s
Dried Cranberries
Shredded Coconut
Chia seeds
I attempted to break up pitted dates using the food processor but they were mightily hard so I soaked them in water while I got the rest of the ingredients ready and pre-heated the oven.
I put everything in the food processor except the rolled oats which I mixed in by hand at the end. In went a small handful of saltana’s, small handful of dried cranberries, a handful of shredded coconut, a couple teaspoons of honey and a cup or so of quick oats and a little bit of the rolled oats along with about a tablespoon of chia seeds. I added in the dates and the mixture was a little dry so I added in a few tablespoons of the water the dates had been soaking in which helped mix the ingredients together.
I then popped them in the oven at 180 degrees Celsius for about 10 minutes, maybe a little less, checking them every few minutes as I wasn’t sure how quickly they would brown up.
This made 6 decent sized bars and I reckon worked out to about $1.90 for the batch if I estimate how much of each ingredient I used.
Things I want to try next time;
– Try a batch using banana as the binding ingredient.
– Try without honey, also try a batch with a little maple syrup instead.
– Try a batch with peanut butter
– Try a batch with protein powder
– Soak the Dates for an hour or so, as I was impatient and only soaked for 5-10 minutes.
– Try soaking the chia seeds in the date ‘syrup’ as they supposedly swell
