The beauty of frittatas or quiches is that the base of the recipe is pretty simple and you can add whatever vegetables you have sitting in your fridge. It’s a good way to use up vegetables which are on their last legs. This roast pumpkin, feta, kumara frittata looks great!
My hubby usually makes a big pot of soup on Sundays – tons of vegetables that he blends together. It is the best way I know to get 10 veggies in one serving!
Such a good way to get in a lot of veges and it doesn’t really feel like it when you are eating it!
I’ve actually made the Avocado Mousse and it’s very good! Lots of creative ways to get those veggies in your belly- great post!

Wow, these all sound amazing!! I would love to eat like this everyday. I eat really healthy, but I find myself getting hungry so fast because I’m not eating filling healthy foods. I need to start cooking these!
