Make use of soups, they are a great way to get a lot of additional vegetables into your diet without really noticing them as much as you do when sitting down to eat a plateful of them. You can even sneak in some vegetables that you may not like as much into soups and you don’t notice them… Think leeks! For me I’m not a pumpkin fan but I don’t mind it in this pumpkin soup recipe!

My hubby usually makes a big pot of soup on Sundays – tons of vegetables that he blends together. It is the best way I know to get 10 veggies in one serving!
Such a good way to get in a lot of veges and it doesn’t really feel like it when you are eating it!
I’ve actually made the Avocado Mousse and it’s very good! Lots of creative ways to get those veggies in your belly- great post!

Wow, these all sound amazing!! I would love to eat like this everyday. I eat really healthy, but I find myself getting hungry so fast because I’m not eating filling healthy foods. I need to start cooking these!

Thanks for stopping by Whitney, my advice if you are not feeling full with eating healthy foods would be to try including some more healthy fats into your diet, nuts, coconut cream and avocado are all good sources that will help keep you full 🙂
